Any good cook will tell you that one of the most important parts of cooking is the quality of your ingredients. It should be common sense, right? Yet, it’s very convenient to use lesser ingredients because they’re so easy to come by. Thankfully people in Austin now have some wonderful options available to them due to the fact that the good people behind Salt & Time opened their brick and mortar store this past weekend!
Here’s what the store looks like from the road. As we were pulling into the parking lot I was bouncing around in the car like a five year-old hopped up on Dayquil. A real butcher shop in my town with knowledgeable, passionate people behind the counter. I’ve dreamed about this moment for a long time.
Inside, the place just screams that it’s brand new. Sparse white walls, gleaming tile and windows. In the cases were gorgeous cuts of high quality beef, lamb and chicken. Outside the cases were some of Salt & Time’s famous cured products.
They all look fantastic, don’t they? And here’s a sneak peek of what they were working on in the back.
I’d venture that these piggy heads will eventually be turned into porchetta di testa.
Before we left I picked up a quarter pound of Lonzino to enjoy on the way home. It was wonderful meat candy—funky yet delicate, with a very enjoyable texture and mouth feel.
