Humbling and exciting!

Good news everybody! I received an e-mail the other day from my friend Helen with a shocking revelation: Cook book goddess Jennifer McLagan included a quote of mine in her essential new tome, “Odd Bits“!

  1. I am procuring a lamb, a hog and a side of beef very soon (I have a large family). I am interested in getting as much of the offal as I can from each. Can you make any recommendations?

    Hog Offal I can think of: head, heart, liver, kidneys, and the hocks. I don’t even know how to begin to request the intestine or if I ask for the small, but not the large etc… Is pig tongue worth eating?

    Beef Offal: Cheeks, tongue, neck, kidney, liver, heart, anything else?

    Lamb: tongue, breast, liver, kidneys, heart . . . anything else?
    I own your first book and I love them
