David Shaw from the very cool belm blog was kind enough to lend me a video of that grand meeting so that you too can see exactly why a culinary giant like Bourdain is so smitten with Mr. Henderson.

Would love the pig’s tail recipe – that’s one part that I’ve never had. My question for him is: is there ANY part of an animal that you’ve tried cooking with that just didn’t work in any sort of recipe? Would love to hear some of the offal disasters!
